Olymel Seeking Contract Finishers

Quebec-based Olymel is recruiting farmers to build new barns to finish the pigs its own farms are raising in Western Canada.

In an interview with Prairie Hog Country late in May, Casey Smit, vice-president of swine production for Olymel in Western Canada, said the company needs 100,000 more spaces to finish the pigs being raised

Today as I am typing this it is 28˚ and muggy, a storm is forecasted overnight. The farmers are seeding as fast as their tractors will go. Around here it was a very late start till snow melted and many had to deal with left over crops from last year’s early snow fall.

Ingredients

3 lb (1.5 kg) Canadian Pork Rib Roast, Rack

3 tbsp (45 ml) Dijon mustard

1 medium onion, minced

3 cloves garlic, minced

2 tbsp (25 ml) paprika

1 tbsp (15 ml) EACH dried basil, salt and crushed black peppercorns

2 tsp (10 ml) EACH dried thyme and celery seed

1 tsp (5 ml) EACH ground sage and cayenne pepper

6 Canadian Pork Loin Centre Chops, 3/4″/2 cm thick

1 tsp (5 ml) canola oil
